Please turn off the heat when you have reached your desired degree of firmness.

BAfter boiling, the soba noodles are transferred to a colander and rinsed immediately.

rec4

CQuickly rinse with water to remove slime.

rec5

DFinally, cold water (preferably ice water) will tighten the noodles.
Drain thoroughly and serve.
*For warm soba noodles
Dip the cold soba into boiling water and serve with warm dipping sauce.

EPlease consume as soon as possible.

rec7

FYou can drink boiled water from buckwheat noodles as sobayu (buckwheat water).
The “nutrients” and “thickening” of the soba will accumulate at the bottom of the pot, so please discard the top clear part of the boiling water and enjoy the thicker, thicker part.
